Fun Tiktok Recipe Video: Healthy Benihana- Beef Teriyaki Cauliflower Fried Rice

A trip to a teppanyaki restaurant like Benihana is a birthday tradition for many families. While we can’t teach you to flip a shrimp tail into your pocket, we can help you bring the flavors of Benihana home with this sweet and savory beef teriyaki. We are serving it with fried rice that’s made healthier because we add a LOT of cauliflower rice.

Active time: 40 minutes | Start to Finish: 70 min | Serves: 4

Ingredients

1.5 lbs. flank steak (or top sirloin) cut into bite-sized pieces
1.5 cups Jasmine rice
2 10-oz bag frozen cauliflower rice, defrosted
2 carrots, peeled and chopped
1 orange or red bell pepper, chopped
3 garlic cloves, minced
4 green onions, separated and chopped
6 large eggs, beaten
1 cup frozen peas
Sugar
Cornstarch
Rice wine (or red wine) vinegar
Soy sauce
Extra-virgin olive oil

Vegetarian Alternative1 16-oz package medium tofu, drained and pressed

Directions
Thoroughly clean the rice by adding it to a pot, rinsing it with water, and then draining off the water while using your hand to keep the rice in the pot. Repeat another time. Add 3 cups water to the rice, cover, bring to a boil and then let simmer for 15-20 minutes. Turn off heat and let rest for 5 minutes. Fluff rice with a fork and remove to a bowl.In a bowl add 1/3 cup soy sauce, 2 Tbs water, 2 Tbs cornstarch, 1 tsp sugar and whisk together. Add the steak and let marinate for 10-30 minutes.

In a large frying pan over medium heat, add 1 Tbs oil. Add the eggs and cook, while scrambling, for about 2-4 minutes. Remove to a plate and use a metal butter knife to slice it into small pieces. Clean the pan with a paper towel.
 In the same pan, add 1 Tbs oil over medium-high heat and add the cauliflower. Cook for about 5-6 minutes, until the cauliflower is warmed. Season with a pinch of salt and remove to a bowl. Clean the pan with a paper towel.
 In the same pan, add 1 Tbs oil over medium-high heat and add the cauliflower and add the carrot and bell pepper and cook for 4-5 minute until softened. Remove to a bowl. Clean the pan with a paper towel. (do you see a pattern here? ☺)

In the same pan add 1 Tbs oil and half the steak (add less to NOT overcrowd the pan) and sear for 2-3 minutes on one-side and 1 minute on the other side. Remove to a plate. Clean the pan with a paper towel and repeat process to cook all of the steak. The key is to make sure there is space between the steak so it sears correctly and gets nicely browned.

Finally, in the same pan, (cleaned with a paper towel) add 2 Tbs oil and the garlic and white parts of the green onions. Cook for 30 seconds, then add the Jasmine and cauliflower rice and stir together for 3-4 minutes. Remove HALF the rice to a bowl.

Now add half of the cooked vegetables, half of the peas and half of the egg to the pan. Season with 2 Tbs soy sauce, 1 Tbs vinegar, a bit of sugar and taste and adjust seasoning as needed. Remove to a bowl. Repeat with the second batch of rice. To serve, add the fried rice on a plate and (if you want) you can shape it into a heart using a spoon or spatula. Add the steak on top and garnish with green onions and enjoy!
