Weekend Recipe: Cauliflower Pizza

“Place cauliflower on pizza, serve.” No, not really. This healthier alternative to a traditional margherita pizza replaces the wheat flour crust with one made from riced cauliflower, egg, and cheese.
 
Active time: 20 min   Start to Finish: 60 min  Serves: 4
 Ingredients
2 cauliflowers
2 cups low-fat skim mozzarella cheese, freshly grated
¾ cup Parmesan cheese, grated
2 eggs, beaten
1 14-oz can crushed tomatoes
½ cup fresh basil
8 cherry tomatoes, halved
Optional: Turkey pepperoni
Extra-virgin olive oil
Garlic powder
Dried oregano
Kosher salt and freshly ground pepper
Sugar

Equipment: food processor, parchment paper
 
Directions
Preheat oven to 400° F.  Remove leaves and stem from the cauliflower and cut the florets into large pieces.  In a food processor, pulse the cauliflower for 30 seconds or until it resembles a clumpy rice.  (You can also grate the cauliflower, but it takes longer.).
 
Place cauliflower in a large, microwave safe bowl with about 2 Tbs water and microwave on high for 5-8 minutes.  The cauliflower should be able to pierced easily with a fork.  Place cauliflower in a cheese cloth or a clean kitchen towel and carefully squeeze it drain most of the liquid.  Then remove cauliflower to a bowl to cool for about 5-10 minute.  Meanwhile, in a bowl add crushed tomatoes, 2 tsp salt, 1 tsp sugar, 1 tsp garlic powder, 1 Tbs olive oil, 1 tsp oregano and mix well.  Taste and adjust seasoning as needed. 
 
In a large bowl combine the cauliflower, 1 cup mozzarella, Parmesan cheese, eggs, 1 tsp garlic powder, 1 tsp oregano, 1 tsp salt and mix well with a fork.  Divide the mixture into two portions and place on a baking sheet lined with parchment paper to form two, circular crust.  Use your hands to shape the crust.  Bake for 20-30 minutes until firm.   Now make your pizzas!  Add the sauce, cheese, pepperoni and fresh basil leaves on top and bake for 10-12 minutes until the cheese is melted.  Remove to a cutting board, slice into 8 pieces and enjoy!
