Healthy Easter-Themed Snacks Students Can Make with LIFT Enrichment English Muffins Recipe

Pizza English Muffins with Cucumber Salad

Pizza English Muffins with Cucumber Salad

Ingredients:

4 English muffins, halved.

1 15-oz can crush tomatoes

2 romaine lettuce hearts, washed and cut into bite-sized pieces.

1⁄2 cucumber, peeled and chopped.

28 oz low-fat skim mozzarella cheese, grated.

1 bunch fresh basil, stems removed.

Dried oregano

Red wine vinegar

Sugar

Extra-Virgin olive oil

Kosher salt and freshly ground pepper

Aluminum foil (if pan doesn’t have a lid)

Directions

Cucumber Salad

Peel the cucumber, then cut it in half horizontally and cut it into thin half-moon slices. Place in a bowl and add chopped lettuce, 1⁄2 Tbs vinegar, 1 Tbs olive oil, 1⁄2 tsp oregano, 1⁄2 tsp salt, and a bit of black pepper. Combine ingredients. Add a bit of sugar if it’s too acidic. Adjust the seasoning as needed.

Pizza Sauce

In a bowl, combine the crushed tomatoes, 1⁄2 tsp salt, 1⁄2 tsp sugar, 1⁄2 tsp oregano, and freshly ground pepper. Check for seasoning and set aside.

English Muffin Pizza

On half of an English muffin, add the sauce, cheese, and a bit of dried oregano and basil. Heat pan over medium heat and add 1 Tbs olive oil. Place pizzas in pan (about 8), cover skillet with lid or aluminum foil, and heat for 5–7 minutes until the bottom is crispy and the cheese is melted. Top with fresh basil and serve with cucumber salad.
