Recipe:  Pan-Seared Steak & Asparagus

Ingredients (for 4)

  • 1.5 lbs NY steak
  • 4 sprigs fresh rosemary
  • 4 garlic cloves, 2 chopped and 2 whole
  • 1 bunch asparagus
  • 1 lemon, chopped into wedges
  • 2 Tbs unsalted butter
  • Extra-virgin olive oil
  • Kosher salt and freshly ground pepper

Parent Prep:  (What parents do 15 minutes BEFORE you bring in your kids so the cooking experience is fun and efficient

  • Take out all ingredients and put them in bowls or small plates
  • Let steak rest at room temperature for 15 minutes on a plate
  • Chop lemon into wedges
  • Wash and dry asparagus and rosemary
  • Remove outer shell from garlic cloves

Directions:
Season the steaks with a drizzle of olive oil and add 2 tsp salt and a pinch of pepper over the steak pieces.  Most of the salt will end up in the pan while cooking it, so add a bit extra than you think.  (Chef’s do this in restaurants!)

Chop 2 garlic cloves into smaller pieces WITH KIDS.  Kids can also break off the steam (brown bottom part) of each asparagus.

In a large frying pan over medium-high heat, add 2 Tbs olive oil, then add steak.  Cook, flipping every 2 minutes for about 8-10 minutes total.  Halfway, add the rosemary, 1 Tbs butter and 2 whole cloves of garlic to the pan.  Use tongs to rub the rosemary over the steak.  Also, use a spoon to spoon the butter (with the garlic in it) over the steaks to add flavor.  Cook until it’s medium or medium-well done (for kids), and let rest on a plate for 5 minutes.  Cut into slices and serve with a drizzle of the pan juice.

As the steak rests, clean the pan with a paper towel, add 2 Tbs olive oil, 2 chopped garlic cloves and stir for 30 seconds.  Add the asparagus and cook for about 5 minutes, until softened, and season with 1 tsp salt and pepper.  Squeeze fresh lemon on top.

To serve:  Add steak with asparagus (and a side of garlic bread or a baked potato and enjoy!)
