When it gets cold outside, SOUP is what I’m craving. It’s inexpensive, healthy and filling.
I’m a BIG fan of ramen, but going out is pricy for a family AND that ramen you eat out is loaded with fat, often from things like pork bones, sesame oil, peanut butter and much more.
If you want your kids to learn how to make a quick ramen at home, make this dish WITH them. It feeds a family of 4 for a few dollars a serving, plus you can bulk it up with vegetables. Add some cooked chicken and you’ve got yourself a well-balanced meal.
Quick Ramen Noodle Soup with Bok Choy
Here is the easiest Ramen you will ever make, and it is much healthier than the one you’ll find at restaurants.
Active Time: 20 mins | Start to Finish: 45 min
Ingredients:
3 packages Ramen Noodles (discard seasoning packets)
2 bok choy, chopped
1 Tbs ginger, grated
3 garlic cloves, minced
4 green onions, chopped + extra for garnish
10 cups chicken broth
2 Tbs soy sauce
1 lime
Vegetable Oil
Salt & Pepper
Optional: Use vegetarian broth for vegetarians
Directions:
First, cook the noodles. Bring a large pot of water to a boil, add noodles and cook until noodles are tender, about 5-7 minutes. Drain and set aside.
Next make the broth: Heat 2 Tbs oil in a large pot over medium heat. Add garlic and ginger and stir frequently, about 1 minutes. Add the bok choy and cook until softened, about 4-5 minutes. Add broth, green onions, soy sauce and juice of lime and bring to a boil. Taste and add salt and pepper as needed.
In a bowl, add noodles to the bottom and add a few cups of broth on top, then garnish with green onions and serve.
