When I taught my first cooking class EVER, back in 2010, I was worried how difficult it would be to safely teach cooking to kids.
I was at a school in Pacific Palisades called Village School, teaching my first class and the recipe was Tomato-Basil Bruschetta.
I needed this class to work, as my new business depended on it, and I had no other job to fall back on.
In the class I had good enrollment, about 16 kids, which proved that my class description appealed to parents who wanted to see their kids eat more vegetables.
When the class started, one child, Owen, said he HATED tomatoes.
He would never eat them.
And I had trouble getting him to simply touch the tomatoes.
The class began with chopping slices of tomatoes into smaller pieces.
Owen looked around and saw other kids chopping safely with metal dinner knives and he decided to follow what the group was doing.
Soon we had ripped up the basil and dressed the tomatoes with a perfect combination of olive oil, vinegar, salt and pepper.
Next I brought out the electric hot plate, and started lightly browning one-side of a piece of baguette to make the toasted bruschetta.
As a group, we took a piece of fresh garlic and rubbed each baguette slice with olive oil.
Finally we put the tomato-basil salad on top of the bruschetta and took a bite.
Owen, looked at his bruschetta, with confusion and uncertainty…
(I wasn’t sure if he we would eat it!)
I gently encouraged him to take one bite…and his eyes lit up!
“I don’t like tomatoes, but this is good!” he proudly told the room.
It was THAT moment that I knew that teaching kids to cook was the way to get them to eat vegetables and expand their palates.
You can’t have someone else make food for them.
You can’t hire pro chefs to make veggies taste amazing.
Instead you have to GET THEM COOKING, and then they are much more likely to try new foods, like Owen!
