Parents and kids can learn how to make a healthier version of a “McDonalds” breakfast sandwich filled with eggs, cheese and turkey bacon.

Ingredients (for 6 sandwiches)
- 6 english muffins
- 9 eggs
- 12 pieces turkey bacon
- 1/4 cup freshly grated cheese (mozzarella or cheddar)
- Butter
- Salt, pepper
Directions:
Toast your english muffins in a toaster or on a large baking sheet in a 425F oven for 8-10 minutes, until golden. Meanwhile in a large saute pan add your turkey bacon in batches, being sure not to overcrowd the pan, and cook until browned on both sides, about 4-5 minutes and remove to a paper-towel lined plate.
Whisk your eggs, add a bit of salt and pepper and in that same pan add 1 Tbs butter and the eggs. Scramble the eggs a bit, and then top with cheese. Cover and let cook for 1 minute.
Slide the egg scramble onto a cutting board and use a large glass to make “circles” that will fit inside an English muffin.
Now assemble!
In an English muffin you can add a bit of mayo or spreadable cheese (I like laughing cow LIte wedges) 2 pieces turkey bacon, egg and cheese and enjoy!
To Freeze:
Let the assembled sandwich cool and then wrap each one in aluminum foil, then freeze in a large ziplock bag for up to 3 months. To reheat, unwrap a sandwich, cover in a damp paper towel and microwave for 3-4 minutes until warmed thoroughly and eat!
