Patatas Bravas with Sweet Potatoes
Tapas are a staple of Spanish cuisine and a popular one is “Patatas Bravas.” These are warm, crispy potatoes served up with a sautéed veggies or a tasty aioli, which is a fancy mayo. Here, we make it extra healthy thanks to sweet potatoes.

Ingredients:
- 1 ½ lbs large sweet potatoes peeled and chopped into 1” cubes
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, chopped
- 1 cup mayonnaise
- Juice of ½ lemon
- Extra-virgin olive oil
- Kosher Salt & Fresh Black Pepper
Instructions:
In a large pot over high heat bring 5 cups of water to a boil, then add the sweet potatoes and boil for 12-15 minutes until just tender. Strain the potatoes and set aside in a bowl.
In a large pan over medium heat add 2 Tbs oil, onion, bell peppers, 2 garlic cloves, 1 tsp salt, black pepper and cook for 3-4 minutes until softened. Remove from the pan.
Add 3 Tbs oil to the same pan, let heat for 1 minutes, then add cooked potatoes, 1 tsp salt, black pepper and let cook for 2-3 minutes on each side until potatoes are browned and crispy. Add vegetables to pan and mix.
To make a quick aioli: Add mayo in a bowl and add 2 garlic cloves, 2 Tbs olive oil, lemon juice,1 tsp salt,
pepper, then whisk together.
Serve potatoes and sautéed veggies topped with a drizzle of aioli.
