Spinach and Apple Salad with Crostini

Here’s a fresh salad that gets kids to eat spinach because of its flavor and delicious dressing.

Active time: 15 min – Start to finish 35min

Ingredients

2 large 10-oz baby spinach
2 granny smith apples, chopped
4 Roma tomatoes, chopped
6 oz mozzarella cheese, cubed
1 loaf baguette or sour dough, thinly sliced
Extra Virgin Olive Oil
Red wine vinegar
Kosher salt and pepper

Directions

in a small bowl whisk together 5 Tbs of olive oil, 3Tbs of vinegar, 2 tsp of salt and black pepper.
In a non-stick pan over medium high heat add 2 Tbs of oil, add bread and toast for 1-2 minutes then flip and
toast for another 1-2 minutes. Season with salt and pepper and continue with remaining slices.
In a large bowl mix together spinach, apples, tomatoes, mozzarella and dressing. Place salad in bowls and
serve with crostini
