One of my new favorite routines of the past month is that ALL of our internal staff has to go watch 2-4 classes in action every month. Between the 8 of us, that’s watching 20-30 live classes per month!
We use this opportunity to give tips to our experienced chefs, say hi to clients and get the “buzz” of seeing a great class in action.

Last week I went to Immaculate Conception, a Catholic School in downtown Los Angeles, and the day’s recipe was “Tofu Lettuce Wraps”
The lesson started with Chef Emma having kids help chop bell peppers, whisk up a quick teriyaki sauce, squeeze limes and get cooking!
She’s got great energy and I give her credit for having 8 kindergarteners in her class and she still kept the lesson moving smoothly.
Next up she sauted the veggies, with the help of the kids, added the tofu talked about plant-based protein and then helped the kids serve it in a lettuce wrap

Guess what?
The kids LOVED the lettuce wraps.
And I ate them and can verify that they were delicious.
Tofu is VERY easy to make delicious for kids
And we got them to eat lettuce wraps!
