A Poke Bowl is a popular Hawaiian dish made of rice, protein and veggies with a tasty sauce. “Poke” means “cut into pieces” and refers to the diced raw fish but here we use canned tuna so it’s safe for kids to enjoy. Active time: 20 min Start to Finish: 50 min Serves: 4 |
Ingredients Poke Bowls 2 cups Jasmine or long-grain rice 3 7-oz cans of tuna in water, drained 2 avocados, chopped into cubes ½ cup carrot, shredded ½ cup edamame, shelled Rice Wine Vinegar, Sugar and Salt Poke Sauce 4 Tbs soy sauce 2 tsp Extra-virgin olive oil (or sesame oil) 2 Tbs rice wine vinegar ¼ cup green onions, chopped + extra for garnish 1 tsp sugar Directions Thoroughly clean the rice by adding it to a pot, rinsing it with water, and then draining off the water while using your hand to keep the rice in the pot. Repeat another time. Add 4 cups water to the rice, cover, bring to a boil and then let simmer for 15-20 minutes. Turn off heat and let rest for 5 minutes. Fluff rice with a fork and remove to a bowl. In a small bowl add 2 Tbs rice wine vinegar, 1 ½ tsp salt and 1 tsp sugar and mix. Add this to the rice to make a quick “sushi” rice” In a small bowl mix the Poke sauce ingredients together: soy sauce, oil, vinegar, sugar and green onions. In a bowl add the drained tuna and mix 1-2 spoonfuls of the sauce. Taste and adjust seasoning as needed. Divide cooked rice between 4 bowls. In each bowl arrange a portion of tuna, avocado, carrot, and edamame. Drizzle with poke sauce and garnish with green onions. Hope you have a great weekend!
