Here’s a go-to casserole dish to try out! It’s simple to put together and packed with flavor from the mashed potatoes, ground beef (96/4 to keep it healthy!) and some veggies.
It’s a great English favorite that I guarantee your kids will like! (We know this, because we cooked this in the Kids Can Cook Inner Circle!)
Shepherd’s Pie with Ground Beef, Mashed Potatoes and Veggies
This pie from England is a savory entrée loaded with ground beef, veggies and mashed potatoes on top! It’s a hearty dish that feeds a crowd without taking too much time or money, to put together
Active Time: 20 min – Start to Finish: 50 min. Serves: 4
Ingredients
1.5 lbs lean ground beef (96% lean)
1 onion, chopped
2 carrots, peeled and chopped
1 cup frozen peas
3 garlic cloves, chopped
2 tsp Worcestershire sauce
2 Tbs Tomato Paste
½ cup chicken stock
1.5 lb russet potatoes, peeled and cubed
1 egg
½ cup Parmesan cheese, grated
Extra-Virgin Olive Oil
Kosher salt & pepper
Directions
Preheat an oven to 400F
In a large pot of boiling water, add the potatoes and cook until fork tender, about 8-12 minutes. Remove to a bowl, season with salt, pepper and ¼ cup Parmesan cheese and mash with a fork or potato masher. When slightly cooled, add the egg and mix well.
In a large pan over medium-high heat, add 2 Tbs oil and saute carrots, onion and garlic until softened, about 4-5 minutes. Add the ground beef, 1 tsp salt, pepper, tomato paste, Worcestershire sauce and cook until browned, about 5-7 minutes, stirring often. Add the chicken stock and peas and cook for 1 minute.
In a large baking tray, add the ground beef mixture and top with the mashed potatoes. Top with the remaining Parmesan and use a fork to poke the top so there are peaks around the mashed potatoes. Bake for 18-25 minutes until golden brown on top. Let rest for 15 minutes before serving and enjoy!
