Weekend Recipe: Chicken Gyro Wraps with Tzatziki

This is a classic Greek lunch on the go. It has delicious Mediterranean flavors with marinated chicken breast tucked into tasty pita bread.

Active Time: 20 min – Start to Finish: 50 min. Serves: 4

Ingredients
1.25 lbs chicken breast, skinless & boneless, chopped into bite-size pieces
2 Roma tomatoes, chopped
¼ cup onion, sliced
2 cups Greek yogurt (Non or Low Fat)
2 garlic cloves, chopped
2 lemons
4 Pita bread
1 large cucumber
¼ cup fresh dill, chopped
Extra-Virgin Olive Oil
Red Wine Vinegar
Dried Oregano
Kosher salt & pepper
 
Directions
In a large bowl mix together 1 cup Greek yogurt, 2 chopped garlic cloves, 1 tsp oregano, 1 tsp salt, 1 Tbs olive oil, 1 Tbs red wine vinegar, juice of 1 lemon, pepper and mix.  Season the chicken on each side with salt and pepper, then add to the yogurt and let marinate for 10-30 minutes.

In a large pan over high heat, add 1 Tbs olive oil, a batch of the chicken and sauté for 4-5 minutes, until the chicken is cooked through and golden brown on all sides.  Do not crowd the pan and do not stir often so the chicken can brown nicely.  If you do, it will release its juices and boil instead of brown. Set aside chicken in a clean bowl.  Wipe pan with a paper towel and repeat 2 more times with remaining chicken.

Meanwhile, make the tzatziki.  Grate an entire cucumber.  Use your hands to squeeze out the extra water.  In a bowl add 1 cup yogurt and add the squeeze cucumber, dill, 1 tsp oregano, 1 tsp salt, 1 Tbs olive oil, juice of 1 lemon and mix well.  Taste and adjust seasoning as needed.  Ideally let this refrigerate for 30-60 minutes.
 
Warm your pita bread in the microwave or on a dry pan over medium heat.  Add the cooked chicken, tomato, onion and tzatziki.  You can use tin foil or butcher paper to wrap it up like a sandwich so it stays together and enjoy!
