Weekend Recipe: Easy Sushi Hand Rolls

Can your kids make sushi at home?

We taught our members of the Kids Can Cook Inner Circle program how to make handrolls a few weeks ago because:

  • It’s easy!
  • You don’t need any raw ingredients (we used imitation crab)
  • It’s healthy
  • It’s fast!  (we made a LOT of sushi handrolls in less than an hour from start to finish)

Easy Veggie Sushi Hand Rolls
Sushi is a classic Japanese dish made of rice that is wrapped in seaweed and filled with vegetables and seafood.  After a bit of practice, you’ll be presenting a beautiful plate of homemade sushi at your next dinner.  We’re focusing on hand rolls because they are easy and require no special equipment.

Active Time: 20 min   Start to Finish: 50 min     Serves: 

2 cups Calrose/sushi rice (in the international or Asian aisle of most grocery stores)
8 sheets of nori (seaweed paper for sushi)
2 avocados, sliced into thin strips
2 carrots, sliced into thin strips
1 cucumber, peeled and sliced into thin strips
1 red bell pepper, sliced into thin strips
Optional:  1 cup imitation crab (which is actually just made of cooked fish…there’s no crab!)
2 Tbs red wine vinegar (traditionally it’s made with rice wine vinegar, but red wine will work just fine)
1 Tbs sugar
1 tsp salt
Soy sauce

Thoroughly clean the rice by adding it to a pot, rinsing it with water, and then draining off the water while using your hand to keep the rice in the pot.  Repeat another time.  Add 4 cups water to the rice, cover, bring to a boil and then let simmer for 15-20 minutes.  Turn off heat and let rest for 5 minutes.  Fluff rice with a fork and remove to a bowl. 

In a small bowl mix the vinegar, sugar and salt.  Then add the mixture to the rice (when it’s slightly warm, but not super hot), gently mix, and let rest.

To make hand rolls
Slice a piece of nori in half.  Wet your hands with water and add about ¼ cup of rice to one side of the nori.  Use your fingers to spread it out so that it covers half the nori.  On top you can add your favorite combination of ingredients, such as 1 slice of imitation crab plus some avocado, cucumber and bell pepper.  Carefully roll the sushi over itself to shape a cone, and use a bit of water to seal the nori to itself.  (Youtube: Sushi Hand Roll of “How to Make Sushi” channel” makes it easier to understand)

Repeat the process and continue to make lots of yummy sushi hand rolls, with different combinations of fillings. Serve with soy sauce!
